Chop and dice the pickles and olives until they are of a size that is visible but does not steal the spotlight, and then mix them with the already cooked potatoes, mayonnaise, cooked shrimp and salt. For the octopus, separate them into tentacles, seal them on both sides with a drizzle of olive oil, and always with the frying pan hot. With the heat still high, finish with the butter, the rest of the olive oil, rosemary and garlic. Saut\u00e9 the tentacles and do not let the garlic burn. As soon as you turn off the heat, add the paprika and saut\u00e9 a little more. Assemble the mayonnaise into two rings and arrange two tentacles crossed on top of each mound of mayonnaise. Distribute the others on the plate and spread the paprika oil.
