{"id":3123,"date":"2025-05-26T14:56:17","date_gmt":"2025-05-26T17:56:17","guid":{"rendered":"https:\/\/cidadecriativa.floripa.br\/?post_type=receitas&#038;p=3123"},"modified":"2025-07-09T09:38:39","modified_gmt":"2025-07-09T12:38:39","slug":"polvo-grelhado-com-mil-folhas-de-aipim-crocante-e-aioli-de-leite-com-erva-baleeira","status":"publish","type":"receitas","link":"https:\/\/cidadecriativa.floripa.br\/en\/receitas\/polvo-grelhado-com-mil-folhas-de-aipim-crocante-e-aioli-de-leite-com-erva-baleeira\/","title":{"rendered":"Grilled Octopus with Crispy Cassava Puff Pastry and Milk Aioli with Baleeira Herb"},"content":{"rendered":"<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<p><strong>Cassava leaf mix:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>600 g of fresh peeled cassava<\/li>\n\n\n\n<li>200 ml clarified butter<\/li>\n\n\n\n<li>100 g of roasted ground bacon<\/li>\n\n\n\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n\n\n\n<div style=\"height:40px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>For the octopus:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 kg of octopus<\/li>\n\n\n\n<li>20 g of whale grass leaves<\/li>\n\n\n\n<li>200 ml soy sauce<\/li>\n\n\n\n<li>1 lemon<\/li>\n\n\n\n<li>100 g of salt<\/li>\n<\/ul>\n\n\n\n<div style=\"height:40px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>For the milk aioli with whale grass:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>100 ml of cold milk<\/li>\n\n\n\n<li>300 ml olive oil<\/li>\n\n\n\n<li>20 g of whale grass<\/li>\n\n\n\n<li>2 peeled garlic cloves<\/li>\n\n\n\n<li>50ml lemon juice<\/li>\n\n\n\n<li>Salt<\/li>\n<\/ul>\n\n\n\n<div style=\"height:40px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Preparation method<\/h3>\n\n\n\n<p><strong>Cassava mille-feuille:<\/strong><\/p>\n\n\n\n<p>Slice the cassava into a 1mm thick strip using a mandolin. Then arrange the layers in a 10cm-high baking dish, brushing butter, salt and pepper between the cassava layers. Cover with aluminum foil and bake for 1 hour at 160 degrees. Remove and let cool in the refrigerator with a weight on top to compact it (quick chiller for 30 minutes or refrigerator for about 6 hours). Remove from the aluminum foil, cut into small squares, distribute the crispy bacon on top of the cut cassava, then bake the cassava squares in a preheated oven at 180 degrees for 10 minutes or until the potatoes are golden brown.<\/p>\n\n\n\n<p><strong>Octopus:<\/strong><\/p>\n\n\n\n<p>Rub in the salt and let sit for 25 minutes. Combine the remaining ingredients in a tall pot with a lid and bring to a boil. Then wash the octopus to remove any residue. Dip the octopus three times before releasing it into the broth to cook for 40 minutes or until tender. Cut the tentacles evenly, making some detailed cuts for assembly, then grill in a hot frying pan with olive oil until crispy.<\/p>\n\n\n\n<p><strong>Milk aioli with whale grass:<\/strong><\/p>\n\n\n\n<p>Blanch the erva baleeira in boiling water for 10 seconds to release its aroma and enhance its color. Cool it with ice water, then dry it well with a perfex or paper towel. Add cold milk, erva baleeira, lemon and garlic to a blender or mixer. Gradually add the olive oil until the mixture is smooth.
